BIRRIA, Consome & Quesabirrias

Bold flavors and unforgettable comfort food. We’ll be making birria, a traditional Mexican stew known for its tender, slow-cooked meat infused with a deep, aromatic blend of chiles and spices.

 

You’ll also learn how to turn that birria into mouth-watering "Quesabirrias" — crispy, cheesy tacos dipped and griddled to perfection.

 

And of course, no birria experience is complete without its flavorful consomé, the rich broth served alongside for dipping or sipping. This class is a true celebration of flavour, tradition, and the kind of food that brings people together.

TAMALES 

 

During this workshop, you will learn how to make traditional Mexican tamales from scratch, starting with how to prepare the perfect corn dough, known as masa.

 

We’ll explore different savoury and sweet fillings, like chicken in red or green salsa or cheese with jalapeños. We will get hands-on experience learning how to properly spread the masa onto soaked corn husks, fill them, wrap them, and steam them to perfection.

 

Along the way, we’ll talk about the cultural importance of tamales in Mexican celebrations and family traditions. By the end of the class, everyone will leave with the skills—and the tamales—to recreate this beautiful dish at home.

ABOUT US

We are Dustin and Maria, and I’m proud to share a piece of my heritage with you. I was born and raised in the vibrant city of Puebla, Mexico — a place where food is deeply woven into the fabric of everyday life. From a young age, I spent countless days in the kitchen alongside my mother, learning the art of Mexican cooking. From chopping fresh vegetables to preparing more intricate traditional dishes, those moments became the foundation of my lifelong passion for food.

I’m forever grateful to my mom for passing down not only her cherished recipes — many of which have been in our family for generations — but also her kitchen wisdom, hands-on techniques, and her love for bringing people together around the table. Along the way, I learned that cooking is not just a skill — it’s learning the language of love. When I cook for friends or family, it’s my way of showing how much they mean to me. It’s putting my heart into every bite.

Through my classes, I hope to share that same passion, history, and joy with you.
